Chicken and Chickpea Stew

Ingredients

  • 1 pound Chicken Breast
  • 1 tablespoon Olive Oil
  • 1/2 16oz jar Salsa
  • 1 15oz can Diced Tomatoes
  • 1 15oz can Tomato Sauce
  • 1 15oz can Garbanzo Beans (drained and rinsed)
    Note:Add another can for Mom
  • 1/2 teaspoon Cumin
  • 1/2 teaspoon Garlic Powder

Directions

  1. Cut Chicken into 1 inch cubes.
  2. Put cubed Chicken and Olive Oil in a soup pot and cook on high for 5 minutes.
  3. Pour Salsa, Diced Tomatoes, Tomato Sauce, Garbanzo Beans, Cumin, and Garlic Powder into pot.
  4. After boiling, lower heat to simmer and cover with lid.
