Ingredients
- 2 c Bob’s Red Mill 1 to 1 Baking Flour
- 1 c Butter (2 sticks)
- 3/4 c Sugar
- 3/4 c Packed Brown Sugar
- 1/4 c Tapioca Flour
- 2 tbsp Softened Cream Cheese
- 1 tsp Baking Soda
- 1 tsp Salt
- 1 tbsp Vanilla
- 1/2 tsp Xantham Gum
- 1 Egg (room temperature)
- 2 Egg Yolks (room temperature)
- 1 pkg Dark Chocolate Chips
Directions
- Cream together sugars, butter, and cream cheese.
- Add eggs and vanilla and mix again until well incorporated.
- In a separate bowl stir together all dry ingredients except chocolate chips.
- While mixing creamed mixture, slowly add dry ingredients.
- When all ingredients are mixed, pour chocolate chips into cookie dough and stir together with a spoon.
- Bake at 375° for 9 – 10 minutes on parchment paper or a non stick pan.
