Chocolate Chip Cookies

Ingredients

  • 2 c Bob’s Red Mill 1 to 1 Baking Flour
  • 1 c Butter (2 sticks)
  • 3/4 c Sugar
  • 3/4 c Packed Brown Sugar
  • 1/4 c Tapioca Flour
  • 2 tbsp Softened Cream Cheese
  • 1 tsp Baking Soda
  • 1 tsp Salt
  • 1 tbsp Vanilla
  • 1/2 tsp Xantham Gum
  • 1 Egg (room temperature)
  • 2 Egg Yolks (room temperature)
  • 1 pkg Dark Chocolate Chips

Directions

  1. Cream together sugars, butter, and cream cheese.
  2. Add eggs and vanilla and mix again until well incorporated.
  3. In a separate bowl stir together all dry ingredients except chocolate chips.
  4. While mixing creamed mixture, slowly add dry ingredients.
  5. When all ingredients are mixed, pour chocolate chips into cookie dough and stir together with a spoon.
  6. Bake at 375° for 9 – 10 minutes on parchment paper or a non stick pan.
