Pasta Caprese

For 2 servings:

Ingredients

  • 3/4 pounds plum tomatoes, seeded, coarsely chopped
  • 4 ounces fresh mozzarella cheese, stripped
  • 1 1/2 tablespoons extra-virgin olive oil
  • 1 teaspoon red wine vinegar
  • 1 teaspoon minced garlic
  • 1/4 cup chopped fresh basil
  • 6 ounces penne pasta

Directions

  1. Mix tomatoes, mozzarella, garlic, oil and vinegar in medium bowl.
  2. Season with salt and pepper.
  3. Let stand 1 hour at room temperature.
  4. Mix in basil.
  5. Cook pasta in large pot of boiling salted water.
  6. Drain, return pasta to pot.
  7. Add tomato mixture and toss gently to blend.
  8. Season with salt and pepper and serve.
