NOTE: Make apple cake 1~2 days before serving will improve flavor and moistness. Cover with plastic wrap and store at room temperature.
Ingredients
Cake
- 2 1/2 cups All-Purpose Flour
- 2 cups Sugar
- 1 teaspoon Baking Powder
- 1 teaspoon Baking Soda
- 1 teaspoon Ground Cinnamon
- 1 teaspoon Salt
- 1 1/2 cups Applesauce
- 3/4 cups Vegetable Oil
- 2 Eggs
- 1 cup Chopped Walnut, divided
Frosting
- 1/2 cup Butter or Margarine
- 4 1/2 cups Confectioners’ Sugar
- 6 tablespoons Apple Juice, divided (Use orange juice if you want it a citric tone instead)
Instructions
- Preheat oven to 350°F
- Grease and flour a 9 x 13-inch baking pan.
- Sift dry ingredients into a large mixing bowl. Add applesauce, oil and eggs.
- Beat at low speed until moistened.
- Beat batter at high speed for 2 minutes.
- Fold in 1/2 cup walnuts.
- Pour into prepared pan.
- Bake for 30 minutes or until toothpick inserted in center comes out clean. (more like 45-50 minutes).
- Cool in pan.
- For frosting, heat butter in a saucepan, stirring continually, over medium heat until lightly browned.
- Beat melted butter, confectioners’ sugar and 4 tablespoons apple juice in a bowl.
- Add remaining apple juice to bowl to make frosting a “spreadable” consistency; beat until creamy.
- Stir in 1/4 cup walnuts.
- Spread over cake and sprinkle remaining walnuts.
