Frosted Apple Cake

Serves 16

NOTE: Make apple cake 1~2 days before serving will improve flavor and moistness. Cover with plastic wrap and store at room temperature.

Ingredients

Cake

  • 2 1/2 cups All-Purpose Flour
  • 2 cups Sugar
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • 1 teaspoon Ground Cinnamon
  • 1 teaspoon Salt
  • 1 1/2 cups Applesauce
  • 3/4 cups Vegetable Oil
  • 2 Eggs
  • 1 cup Chopped Walnut, divided

Frosting

  • 1/2 cup Butter or Margarine
  • 4 1/2 cups Confectioners’ Sugar
  • 6 tablespoons Apple Juice, divided (Use orange juice if you want it a citric tone instead)

Instructions

  1. Preheat oven to 350°F
  2. Grease and flour a 9 x 13-inch baking pan.
  3. Sift dry ingredients into a large mixing bowl. Add applesauce, oil and eggs.
  4. Beat at low speed until moistened.
  5. Beat batter at high speed for 2 minutes.
  6. Fold in 1/2 cup walnuts.
  7. Pour into prepared pan.
  8. Bake for 30 minutes or until toothpick inserted in center comes out clean. (more like 45-50 minutes).
  9. Cool in pan.
  10. For frosting, heat butter in a saucepan, stirring continually, over medium heat until lightly browned.
  11. Beat melted butter, confectioners’ sugar and 4 tablespoons apple juice in a bowl.
  12. Add remaining apple juice to bowl to make frosting a “spreadable” consistency; beat until creamy.
  13. Stir in 1/4 cup walnuts.
  14. Spread over cake and sprinkle remaining walnuts.
