Green Chile Enchiladas

Mae Mae’s recipe

Ingredients

  • Roasted green Chile
  • Powder garlic
  • 1/2 cup of chopped onion
  • 1/4 cup Olive Oil
  • 1/3 cup flour (heaping)
  • 2 14oz cans Chicken Broth
  • whole rotisserie chicken de-boned
  • 24 corn tortillas

Preparation

  1. Peel Green Chile and de seed
  2. Dice Green Chile and add garlic to taste, set aside in a bowl.

Directions

  1. Pour oil into preheated pan on Medium
  2. Sprinkle flour until thick rue (like cream of wheat)
  3. Continue cooking until light caramel color.
    Note: This removes the raw flour taste. Remove from heat immediately.
  4. With a Whisk, pour in chicken stock.
  5. Add onion and green Chile mix to picante setting (1/3 cup good start)
  6. Add 1/2 tip Cumin, 1/2 tsp. Oregano, 1/4 tsp. Coriander, 1 tsp. Garlic, 3/4 tsp. Salt
  7. Simmer 15 minutes
  8. add Chicken
  9. Soften corn tortillas in hot vegetable oil.
