Spanish Rice

Ingredients

  • 1 carton of Chicken Broth (roughly 24oz)
  • 1 can Diced Tomato
  • 2 cups of rinsed Rice
  • 1/3 cup Oil
  • 1 White Onion
  • 1 tablespoon minced Garlic
  • 1.5 teaspoons Salt
  • 4-5 slices of Jalapenos (to taste)

Directions

  1. Preheat oven to 350°F
  2. Blend Diced Tomatoes and Onion.
  3. Pour mixture in a large glass measuring cup and top the rest with Chicken Broth to the 4 cups line.
  4. In a large skillet, heat Oil. When Oil is hot, saute the Rice.
  5. Add Salt, Garlic, and Jalapenos. Saute for a little longer.
  6. Pour the tomato mixture into the rice and transfer to a casserole pan.
  7. Bake in over for 45 minutes with the lid on.
