Ingredients
- 1 carton of Chicken Broth (roughly 24oz)
- 1 can Diced Tomato
- 2 cups of rinsed Rice
- 1/3 cup Oil
- 1 White Onion
- 1 tablespoon minced Garlic
- 1.5 teaspoons Salt
- 4-5 slices of Jalapenos (to taste)
Directions
- Preheat oven to 350°F
- Blend Diced Tomatoes and Onion.
- Pour mixture in a large glass measuring cup and top the rest with Chicken Broth to the 4 cups line.
- In a large skillet, heat Oil. When Oil is hot, saute the Rice.
- Add Salt, Garlic, and Jalapenos. Saute for a little longer.
- Pour the tomato mixture into the rice and transfer to a casserole pan.
- Bake in over for 45 minutes with the lid on.
