Ingredients
- 3 pounds boneless skinless Chicken Thighs, cubed into 1/2″ pieces
- 1 can (15 oz) Garbanzo Beans or Chickpeas, rinsed and drained
- 1 can (14.5 oz) Diced Tomatoes
- 1 cup Lime-garlic Salsa
- 2 tbsps Olive Oil
- 2 tsps Minced Garlic
- 1 tsp Ground Cumin
Directions
- In a pan or dutch oven, cook Chicken Thighs and Garlic in Oil for 5 minutes
- In a stew pot, Combine all ingredients, cover and simmer until Chicken is done (15 minutes)
