Spicy Chicken Stew

Ingredients

  • 3 pounds boneless skinless Chicken Thighs, cubed into 1/2″ pieces
  • 1 can (15 oz) Garbanzo Beans or Chickpeas, rinsed and drained
  • 1 can (14.5 oz) Diced Tomatoes
  • 1 cup Lime-garlic Salsa
  • 2 tbsps Olive Oil
  • 2 tsps Minced Garlic
  • 1 tsp Ground Cumin

Directions

  1. In a pan or dutch oven, cook Chicken Thighs and Garlic in Oil for 5 minutes
  2. In a stew pot, Combine all ingredients, cover and simmer until Chicken is done (15 minutes)
