Roux
Thicken Flour (Gluten Free works here), oil, and bacon grease.
Ingredients
- 3 tablespoons Fat: 1/4 cup of Flour (or more as needed)
- Chicken Stock
- Green Chile
- Onion
- Salt & Pepper
- Cumin
- Coriander
- Garlic Powder
- Onion Powder
- small Oregano
- Chicken chunks
Instructions
- Start slowly. Add Chicken Stock to roux
- Add Green Chile and spices
- Add Chicken last
