{"id":935,"date":"2025-03-18T20:33:07","date_gmt":"2025-03-19T02:33:07","guid":{"rendered":"https:\/\/www.ngfamily.dynu.com\/ngwp\/?p=935"},"modified":"2025-03-18T20:34:05","modified_gmt":"2025-03-19T02:34:05","slug":"creamy-cauliflower-and-potato-soup","status":"publish","type":"post","link":"https:\/\/www.ngfamily.freeddns.org\/ngwp\/?p=935","title":{"rendered":"Creamy Cauliflower and Potato Soup"},"content":{"rendered":"\n<pre class=\"wp-block-verse\">Prep: 10 Minutes * Pressure: 5 Minutes * Total: 35 Minutes * Pressure Level: High * Release: Natural<\/pre>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 tablespoon Extra-virgin Olive Oil<\/li>\n\n\n\n<li>1 medium Yellow Onion, diced<\/li>\n\n\n\n<li>3 Garlic Cloves, smashed<\/li>\n\n\n\n<li>1 medium Cauliflower Head, broken into large florets<\/li>\n\n\n\n<li>1 pound Yukon Gold Potatoes, peeled and cut into \u00bd-inch cubes<\/li>\n\n\n\n<li>4 cups Vegetable or Chicken Broth, plus more if needed<\/li>\n\n\n\n<li>Kosher salt<\/li>\n\n\n\n<li>Freshly ground Black Pepper<\/li>\n\n\n\n<li>1 cup Whole Milk or Half-and-Half<\/li>\n\n\n\n<li>1 cup shredded sharp Cheddar Cheese, divided<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Directions<\/h2>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Preheat the Instant Pot by selecting Saute.<\/li>\n\n\n\n<li>Once hot, add the oil followed by the onion and garlic.<br>Stir and cook for about 3 minutes, until the onion begins to turn translucent.<\/li>\n\n\n\n<li>Add the cauliflower, potatoes, and broth. Season with salt and pepper. Secure the lid.<\/li>\n\n\n\n<li>Select Manual and cook at high pressure for 5 minutes.<\/li>\n\n\n\n<li>Once cooking is complete, select Cancel and let naturally release for 10 minutes. Release any remaining steam.<\/li>\n\n\n\n<li>The potatoes and cauliflower should be very tender. Add the milk or half-and-half and \u00bd cup of cheese.<\/li>\n\n\n\n<li>Blend until smooth using an immersion blender. Alternatively, blend in batches in a blender, being careful to crack the lid. Add more broth if you want a thinner soup.<\/li>\n\n\n\n<li>Taste for seasoning.
