class=\"wp-block-list\">\n<li>6 Eggs Whites (large)<\/li>\n\n\n\n<li>2-\u00bd cups all-purpose Flour (2-\u00be cups Cake Flour for whiter cake) <\/li>\n\n\n\n<li>2 cups Sugar<\/li>\n\n\n\n<li>1 cup Sour Cream (full fat)<\/li>\n\n\n\n<li>\u00bd cup Milk (Whole Milk preferred)<\/li>\n\n\n\n<li>\u2154 cup Shortening<\/li>\n\n\n\n<li>\u00bc cup Butter (unsalted, room temp.)<\/li>\n\n\n\n<li>2 tsp Vanilla Extract<\/li>\n\n\n\n<li>1-\u00bd tsp Baking Powder<\/li>\n\n\n\n<li>1 tsp Salt<\/li>\n\n\n\n<li>\u00bd tsp Baking Soda<\/li>\n\n\n\n<li>\u00bd tsp Almond Emulsion (optional for taste)<\/li>\n\n\n\n<li>1 tsp Butter Extract (optional for emulsion)<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">Instructions<\/h3>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Preheat the oven to 325\u00b0F<\/li>\n\n\n\n<li>Grease and flour two 8 inch rounds (for 2 inch thick) cake pans or three 6 inch rounds.<br>(Line bottom with parchment paper.)<\/li>\n\n\n\n<li>In a bowl, mix together the Egg Whites, Sour Cream, Milk, Vanilla Extract, Almond Emulsion, and Butter Extract.<br>Whisk until smooth and set aside.<\/li>\n\n\n\n<li>In a large mixing bowl, add the Flour, Sugar, Baking Soda, Baking Powder, and Salt.<br>Whisk together.<\/li>\n\n\n\n<li>Add the Shortening and Butter in chunks to the flour mixture.<\/li>\n\n\n\n<li>Mix until the flour is coated with the shortening and butter.<\/li>\n\n\n\n<li>Add in half the liquid mixture and mix just until combined.<\/li>\n\n\n\n<li>Add in the last half of the liquid mixture and mix just until combined.<\/li>\n\n\n\n<li>Scrape down the sides of the bowl and then mix again, only for 10-15 seconds.<br>You want to be careful not to over-beat the batter.<\/li>\n\n\n\n<li>Pour into the greased and floured cake pans and bake for
